Maccheroni alla chitarra

Un primo piatto hand made secondo la tradizione abruzzese

"Maccheroni alla chitarra", detti anche Spaghetti alla chitarra, sono un formato di pasta tipico della nostra regione, prodotto grazie ad un telaio provvisto di corde, tramite il quale la pasta fresca viene tagliata e divisa in strisce a base quadrata, con una buona consistenza. Generalmente vengono accompagnati con sugo di agnello, peperoni o con un semplice sugo di pomodoro al peperoncino, con abbondante pecorino spolverizzato.


In antichità all'impasto che si preparava per la sfoglia dei maccheroni alla chitarra, veniva unito dello zafferano, preventivamente sciolto nelle uova.

La bontà di questo piatto è legata alla lavorazione manuale, che dona compattezza all'impasto,  e gli spaghetti sono particolarmente resistenti alla cottura. Anche le massaie più esperte affinano la tecnica nel corso degli anni, realizzando piatto che sono ispirazione anche per i pastifici noti come la De Cecco e la Delverde.
